The Hungarian dried egg market saw steady growth from 2018 to 2019, reaching 623.4 tons, before a significant surge to 810.8 tons in 2020. The COVID-19 pandemic was the key driver, as increased home cooking and baking raised demand for dried eggs as a convenient ingredient.

Following this peak, consumption fell to 580.5 tons in 2021 but then jumped to 919.2 tons in 2022. This rebound was fueled by an avian influenza outbreak that limited fresh egg availability, boosting dried egg demand. Regulatory changes on food safety and egg identification also played a role. The market then dipped to 781.8 tons in 2023, partly due to global supply chain disruptions affecting raw material supply.

Regulatory requirements further tightened in 2024, particularly in food safety and labeling aligned with EU rules, while industrial usage expanded in fast-food, bakery, and frozen food sectors. Consumer preference for healthy, high-protein options continued, and new players, including state-owned companies, scaled up production capacity.

Hungary's dried egg production saw a two-year rise before declining. In 2021, the country produced 631.6 t of dried eggs, down 4.7% from 2020. The peak was in 2020 at 662.7 t, while the largest annual increase occurred in 2019 at 3.5%.

Hungary's dried egg production value increased for the second year in a row. In 2021, output was valued at 3 251 K $ US, up 8.3% from the previous year. The lowest value was in 2019 at 2 853 K $ US, with the biggest drop that year at 12.9%.

After two years of decline, Hungary's dried egg exports rebounded. In 2021, exports totaled 366.5 t, surging 38.7% from 2020. Over the 2018-2021 period, exports fell by 20.8%, averaging a 7.5% annual decrease. The lowest point was in 2020 at 264.3 t, with the steepest drop in 2019 at 27.7%.

From 2018 to 2021, Austria, Romania, and Germany were the top buyers of Hungarian dried eggs by volume. Austria accounted for 33.4% of exports, Romania for 28.3%, and Germany for 15.6%, together making up 77.4% of total exports.

Following a two-year decline, Hungary's dried egg export value rose. In 2021, exports reached 1 886 K $ US, a sharp 57.5% increase from the previous year. Between 2018 and 2021, export value dropped by 22.7%, with an average annual decline of 8.2%. The lowest value was in 2020 at 1 197 K $ US, and the largest fall was in 2019 at 39.1%.

In terms of value from 2018 to 2021, Austria, Romania, and Germany led Hungary's dried egg exports. Austria represented 31.1% of export value, Romania 29.7%, and Germany 13.9%, collectively accounting for 74.6% of total exports.

The lowest volume was in 2019 at 314.9 t, with the biggest decline that year at 23.8%. Imports peaked in 2020 with a 30.9% increase.

From 2018 to 2021, Poland, Latvia, and Bulgaria were the main suppliers of dried eggs to Hungary by volume. Poland contributed 25.1% of imports, Latvia 17.6%, and Bulgaria 12.4%, together forming 55.1% of total imports.

Over the 2018-2021 period, import value fell by 19.7%, with an average annual decrease of 7.0%. The lowest value was in 2019 at 1 543 K $ US, with the largest drop that year at 30.7%. The biggest increase was in 2020 at 10.3%.
