Market volume dipped to 30 143 tons in 2020. During this period, the European Commission introduced new traceability and labeling rules for dried egg products under EC Regulation 853/2004, while several Spanish retailers implemented cage-free policies, increasing industrial need for egg powder. By 2021, the market stabilized at 29 796 tons as COVID-19 pandemic disruptions to fresh egg supply chains led manufacturers to bolster strategic reserves of dried eggs, and major public producers like Denmark's Lurpak invested in new spray-drying capacity for cage-free powder.

Growth resumed in 2022, with market volume reaching 34 487 tons, supported by the announcement of a new spray-drying facility in the UK by Ready Egg Products and the EU's imposition of anti-dumping duties on imports from Ukraine, which affected product availability. A sharp surge followed in 2023, with volume jumping to 50 915 tons, driven by renewed avian flu outbreaks that constrained fresh egg supply and a definitive ban on cage-egg sales by major Spanish retailers like Mercadona, which accelerated the use of dried eggs in food manufacturing.

Europe's dried egg production volume declined after two consecutive years of growth. In 2019, production reached its peak at 43,356 tons, but then fell by 9.3% in 2020 to 39,326 tons. Over the four-year period from 2017 to 2020, production increased by 25.4%, with an average annual growth rate of 7.8%. The most significant year-on-year increase occurred in 2019, when production rose by 22.3%.

After two years of growth, dried egg production in Europe declined. In 2019, output reached its highest value at $221.4 million, but then decreased by 11.3% in 2020 to $196.4 million. Between 2017 and 2020, Thailand, Japan, and Saudi Arabia were the largest buyers of dried eggs from Europe, accounting for 2.2%, 1.4%, and 1.1% of exports in kind, respectively. However, their combined share was only 4.7% of total exports, indicating a highly diversified market structure with no single dominant destination.

From 2017 to 2020, the United States, India, and Argentina were the leading suppliers of dried eggs to Europe, accounting for 3.3%, 2.6%, and 2.1% of imports in kind, respectively.
