The dried eggs market in MERCOSUR experienced fluctuations in domestic volume between 2018 and 2023, reaching a peak of 15,736 tonnes in 2021 before declining to 14,301 tonnes in 2023. The initial growth in 2020 and 2021 coincided with a strategic commitment by major player Mantiqueira in 2020 to expand its production of higher-value egg products, including organic eggs. This investment in the value-added egg segment supported overall egg supply, which in turn facilitated increased production of dried eggs, contributing to the rise in available market volume during those years.

Subsequently, the domestic market volume contracted in 2022 and 2023 despite continued growth in dried egg production, which reached 17,516 tonnes in 2023. This shift was primarily driven by a substantial reorientation of supply towards export markets. Exports of dried eggs from the region surged from 1,089 tonnes in 2021 to 3,510 tonnes in 2023. A key factor behind this export boom was a 'pre-listing' agreement between Brazil and Chile finalized in 2023, which significantly facilitated market access and boosted shipments abroad, redirecting a larger share of production from the domestic market.
