From 2018 to 2019, the European liquid egg market volume grew from 306 thousand tons to 326 thousand tons. This expansion was supported by increased laying rates and stable domestic supply, alongside rising per capita consumption which bolstered demand for liquid egg products, particularly those from free-range and organic systems.

In 2020, market volume contracted sharply to 186 thousand tons. Highly pathogenic avian influenza (HPAI) outbreaks reduced domestic egg availability, while the COVID-19 pandemic simultaneously boosted demand for convenience foods containing liquid eggs. Volume recovered to 296 thousand tons in 2021, a period that saw the implementation of stricter EU traceability rules for liquid eggs and a growing emphasis on quality labeling.

Market volume fell to 238 thousand tons in 2022, a year in which EU import quotas for Ukrainian eggs and improved feed cost economics influenced supply chain dynamics. The decline continued to 181 thousand tons in 2023, driven by renewed HPAI outbreaks that caused acute supply shortages and price increases, even as new EU regulatory approval for using liquid eggs in mayonnaise and dressings opened additional demand segments.

Liquid egg production in Europe has increased for the third consecutive year. In 2020, Europe produced 281.9 thousand tons of liquid eggs, marking a 0.8% rise compared to the previous year. Over the period from 2017 to 2020, production grew by 23.7%, with a compound annual growth rate of 7.4%.
