The market for alliaceous vegetables in Bosnia and Herzegovina saw significant fluctuations between 2018 and 2023. The market contraction in 2022 was driven by supply-side constraints. Unfavorable weather conditions and high cultivation costs reduced local harvests, while damage to garlic plantations in China limited export availability to Europe, tightening import supply. During this period, the market also saw the emergence of black garlic production in Herzegovina, led by company Farmavit, which created a new value-added segment reflecting evolving consumer preferences.

After two consecutive years of growth, Bosnia and Herzegovina's production of alliaceous vegetables declined. In 2021, the country produced 42 570 tonnes, which represents an 18.2% decrease compared to 2020. Over the period from 2018 to 2021, overall production fell by 3.2%, with an average annual decline of 1.1%. The highest production level was recorded in 2020 at 52 022 tonnes, which also saw the largest increase of 13.0%.
