The Bulgarian yoghurt market expanded steadily from 112.9 thousand tonnes in 2018 to 144.7 thousand tonnes in 2021. The COVID-19 pandemic in 2020 reinforced consumer focus on health and immunity, supporting demand for probiotic and functional yoghurts. Despite rising inflation and raw material costs in 2021, which put upward pressure on prices, market volume continued to grow marginally.

In 2022, the market contracted to 132.3 thousand tonnes, as geopolitical tensions and associated sanctions led to significant price increases and reduced consumer purchasing power. The following year saw a partial recovery to 137.2 thousand tonnes, amid ongoing macroeconomic volatility and a gradual adjustment to new market conditions.

Bulgaria's yoghurt production grew for the second year in a row. In 2020, the country produced 138.7 thousand tons, up 6.5% from 2019. Over the 2017-2020 period, production rose by 4.4%, with an average annual growth rate of 1.4%. The lowest output was in 2018 at 115.7 thousand tons, marking the largest decline of 12.9%. In contrast, 2019 saw the biggest increase of 12.5%.

Bulgaria's yoghurt production value also increased for the second consecutive year. In 2020, it reached 292.9 million US dollars, a 26.0% rise from 2019. From 2017 to 2020, the value grew by 36%, averaging 10.8% per year. The lowest value was in 2018 at 204.8 million US dollars, which saw the largest decline of 4.9%.

Exports yoghurt from Bulgaria

Bulgaria's yoghurt export volume fell for the second year in a row. In 2020, exports totaled 6 335 tons, down 13.5% from 2019. Between 2017 and 2020, exports dropped by 26.3%, with an average annual decrease of 9.7%. The peak was in 2018 at 9 525 tons, which had the largest increase of 10.8%. The largest decline occurred in 2019, at 23.1%.

From 2017 to 2020, Greece, Spain, and Romania were the top destinations for Bulgaria's yoghurt exports by volume. Greece accounted for 32.5% of exports, while Spain and Romania each made up 15.3%. Together, these three countries represented 63.1% of total export flows.
