The market for vegetables, pulses and potatoes in vinegar in the Philippines declined to 54 340 t in 2019 after the FDA and Department of Agriculture identified and ordered the removal of adulterated vinegar brands containing synthetic acetic acid. This regulatory enforcement reduced the supply of non-compliant products, contributing to the contraction. Market volume then stabilized at 54 468 t in 2020 before growing by 4.5% to 56 943 t in 2021.

From 2022 to 2023, the market remained relatively stable, recording 56 589 t and 56 122 t respectively. During this period, the Department of Agriculture's Philippine Vegetable Industry Roadmap, implemented from 2021, set strategic directions for quality standards and processing development. In 2024, the FDA drafted stricter standards for vinegar production, banning synthetic acetic acid, while the DA and Universal Robina Corporation launched a potato farming support program to boost local raw material supply.
