The market volume for vegetables, pulses and potatoes in vinegar in Hungary showed considerable fluctuation between 2018 and 2023. Starting at 21 846 t in 2018, it contracted sharply to 13 150 t in 2019 and fell further to 11 026 t in 2020. A partial recovery to 13 370 t followed in 2021, but another decline to 10 547 t was recorded in 2022, before a strong rebound to 14 217 t in 2023.

In 2022, drought conditions significantly impacted domestic vegetable production, reducing the availability of raw materials. Concurrently, exports of pickled products grew by 17%, drawing supply away from the local market and contributing to the year's volume decline. A regulatory change effective from July 1, 2022, also removed the separate permit requirement for small producers, broadening market access for local suppliers of pickled vegetables.

From 2024, new EU packaging regulations came into force, requiring that packaging for fresh fruits and vegetables under 1.5 kg must not be single-use and that adhesive labels must be fully compostable. This directly affects the packaging and labeling requirements for preserved pickled products on the market.

Hungary's production of vegetables, pulses, and potatoes in vinegar increased in 2021 after a two-year decline. The country produced 25 832 tonnes that year, marking a 5.2% rise compared to 2020. However, over the entire 2018-2021 period, production fell by 30.8%, with an average annual decline of 11.5%. The lowest production level was recorded in 2020 at 24 558 tonnes, while the sharpest drop occurred in 2019 with a 27.2% decrease.

Hungary's production value for vegetables, pulses, and potatoes in vinegar rose in 2021 following a two-year decrease. Output was valued at 28 866 thousand US dollars that year, representing a 12.1% increase from 2020. From 2018 to 2021, however, production value declined by 29.8%, translating to an average annual decrease of 11.1%. The lowest value was recorded in 2020 at 25 757 thousand US dollars, with the most significant drop happening in 2019 at 35.0%.

Hungary's exports of vegetables, pulses, and potatoes in vinegar declined for the second consecutive year in 2021, reaching 30 693 tonnes—a 5.5% decrease from 2020. Despite this recent trend, exports grew by 5.3% overall between 2018 and 2021, averaging a 1.7% annual increase. The peak export volume was recorded in 2019 at 33 325 tonnes, which also saw the largest yearly rise of 14.3%.

From 2018 to 2021, France, Germany, and Romania were the primary destinations for Hungary's exports of vegetables, pulses, and potatoes in vinegar by volume. France accounted for 21.1% of exports, Germany for 21.0%, and Romania for 17.8%, together making up 59.9% of total export flows.

Hungary's imports of vegetables, pulses, and potatoes in vinegar declined for the second straight year in 2021, standing at 18 232 tonnes—a moderate 3.8% drop from 2020. However, imports increased by 33.1% overall between 2018 and 2021, averaging a 10.0% annual growth. The highest import volume was recorded in 2019 at 19 329 tonnes, which also experienced the largest yearly increase of 41.1%.

From 2018 to 2021, Germany, Poland, and Serbia were the key sources for Hungary's imports of vegetables, pulses, and potatoes in vinegar by volume. Germany supplied 58.9% of imports, Poland 13.7%, and Serbia 5.2%, together representing 77.8% of total import flows.
