By 2022, the market grew further to 47 583 tonnes, aided by the emergence of a premium segment featuring organic and spelt-based products, as well as an increasing number of consumers with specific dietary requirements, such as insulin resistance or gluten sensitivity, which boosted demand for egg-free pasta.

In the following years, the market kept growing, reaching 57 358 tonnes in 2023 and 65 090 tonnes in 2024. In value terms, the market increased from 27.5 million US dollars in 2018 to 86.5 million US dollars in 2024, reflecting both volume growth and a possible shift towards higher-value products.

From 2018 to 2021, production rose by 69.1%, with a compound annual growth rate of 19.1%. The minimum volume was recorded in 2019 at 21 608 tonnes, which also experienced the largest decline of 7.3%. The most substantial increase was in 2020, with a surge of 68.5%.
