Between 2018 and 2020, the Hungarian stuffed pasta market volume first expanded to 23 568 t in 2019, supported by growing consumer interest in international varieties like Italian ravioli and Russian pelmeni. However, it contracted sharply to 14 313 t in 2020.

A recovery phase followed, with market volume reaching 17 216 t by 2022. This growth was partly driven by shifting consumer preferences toward healthier eating, which encouraged producers to offer more nutritious options, and the expansion of food delivery channels through the emergence of ghost kitchens.

After 2022, the market volume declined to 14 372 t in 2023 and further to 11 808 t in 2024. During this period, the dynamic growth of e-commerce in Hungary created new online sales opportunities, though it did not reverse the overall consumption decrease. In value terms, the market increased from $21.5 million in 2018 to $30.8 million in 2024, reflecting a move toward higher-value products.

In 2021, Hungary's stuffed pasta production reached a value of 36 041 thousand US dollars, marking a significant 42.6% increase from the previous year. Looking at the period from 2018 to 2021, production grew by 3.7%, with an average annual growth rate of 1.2%. The lowest value was recorded in 2020 at 25 282 thousand US dollars, while the peak occurred in 2019 at 38 321 thousand US dollars. The most substantial decline of 34.0% was observed in 2020.

In 2021, Hungary produced 15 806 tonnes of stuffed pasta, showing a notable 15.7% rise compared to 2020. Over the 2018-2021 period, however, production decreased by 29.1%, with an average annual decline of 10.8%. The lowest output was in 2020 at 13 663 tonnes, and the highest was in 2019 at 23 923 tonnes. The largest drop of 42.9% occurred in 2020.

Hungary's stuffed pasta exports rebounded in 2021 after two years of decline, reaching 3 816 tonnes, which represents a dramatic 40.1% increase from the previous year. From 2018 to 2021, exports overall decreased by 11.3%, translating to an average annual decline of 3.9%. The lowest level was recorded in 2020 at 2 723 tonnes, with the largest decline of 22.8% occurring in 2019.

Between 2018 and 2021, France and Belgium were the primary destinations for Hungary's stuffed pasta exports in volume terms, together accounting for 84.7% of total exports, while other partners made up the remainder.

Hungary's stuffed pasta exports in value terms recovered in 2021 following a two-year decline, totaling 17 454 thousand US dollars, a 37.1% increase from 2020. Over the 2018-2021 period, exports decreased by 14.2%, with an average annual decline of 5.0%. The lowest value was in 2020 at 12 728 thousand US dollars, and the largest drop of 25.7% was recorded in 2019.

The lowest value was in 2019 at 6 741 thousand US dollars, which also saw the largest decline of 5.0%. The largest increase of 17.0% occurred in 2020.
