The Austrian market for fresh or chilled spinach reached its highest volume in 2019 at 15 209 t, after which it experienced a sustained contraction, falling to 8 792 t by 2023. This decline represented a reduction of over 40% from the peak, with the most pronounced drop occurring between 2021 and 2022. The overall trend during this period was distinctly downward after the initial growth.

Domestic production mirrored this downward trajectory, decreasing from 14 510 t in 2019 to 7 760 t in 2023. Imports showed volatility but increased notably from 2021 onward, partially offsetting the falling local output, while exports remained negligible. The market's contraction was therefore driven primarily by a reduction in local supply.

Factors highlighted in 2024 shed light on challenges affecting the fresh spinach segment. Unfavorable spring weather conditions were reported to have hampered harvests, contributing to production declines. Furthermore, a discernible consumer preference for frozen spinach due to its better nutrient retention and availability has been noted, which may have dampened demand for the fresh variant in recent years.

Over the 2017-2020 period, production rose by 15.5%, which translates to an average annual growth rate of 4.9%. The highest production level was recorded in 2019 at 14 510 tonnes, with the largest year-on-year increase occurring in 2018 at 13.0%.

Austria's spinach production value declined following two years of increases. In 2020, the output was valued at 44 247 thousand US dollars, a slight drop of 3.0% compared to 2019. From 2017 to 2020, the production value grew by 30.4%, with a compound annual growth rate of 9.3%. The peak value was reached in 2019 at 45 622 thousand US dollars, and the most significant increase happened in 2018 at 27.3%.

Austria's spinach exports grew for the second year in a row. In 2020, the country exported 88.7 tonnes of spinach, a sharp increase of 54.8% from the previous year. Between 2017 and 2020, exports rose by 66.2%, equivalent to an average annual rate of 18.5%. The lowest export volume was in 2018 at 44.1 tonnes, which also saw the largest decline of 17.3% that year.

From 2017 to 2020, Slovakia, Germany, and Hungary were the top buyers of Austrian spinach by volume. Slovakia accounted for 45.5% of exports, Germany for 16.5%, and Hungary for 12.7%, together making up 74.7% of total spinach exports from Austria.

Austria's spinach export value increased for the second consecutive year. In 2020, exports totaled 297 thousand US dollars, a sudden rise of 64.9% compared to 2019. Over the 2017-2020 period, export value grew by 87.8%, with a compound annual growth rate of 23.4%. The lowest value was recorded in 2018 at 147 thousand US dollars, which also experienced the largest decline of 6.9% that year.
