The Russian sauces and condiments market remained stable at around 888 thousand tons in 2018 and 887 thousand tons in 2019. During this period, import substitution policies spurred active growth in domestic production, particularly in the Central Federal District, where manufacturers in the Moscow Region significantly increased output. The development of local projects for growing and processing agricultural crops for seasonings intensified market competition.

Market volume declined to 842 thousand tons in 2020 but recovered to 904 thousand tons in 2021. This recovery was supported by continued expansion in production and consumption, as well as growing interest from Russian manufacturers in export opportunities.

From 2022 onward, the market continued to grow, reaching 1 031 thousand tons in 2024. Sanctions and the exit of international companies such as McCormick & Co. reshaped supply chains and stimulated domestic production of seasoning and spice mixes. Russian producers, including Nestlé Russia and Unilever CIS, adapted to the new conditions, accompanied by rising sauce sales and increased mayonnaise output. Growth in retail trade and household incomes further contributed to market expansion.

In 2021, output reached 968 thousand tons, marking a modest 7.2% increase from the previous year. Looking at the period from 2018 to 2021, production grew by 4.7%, which translates to an average annual growth rate of 1.5%. The lowest production level was recorded in 2020 at 904 thousand tons, with the largest decline of 1.7% occurring that same year.

Russia's exports of sauces, mixed condiments, and seasonings have risen for the third year in a row. In 2021, exports totaled 123.0 thousand tons, showing a controlled gain of 9.8% compared to 2020. From 2018 to 2021, exports increased by 32.2%, equating to an annualized growth rate of 9.8%.

Between 2018 and 2021, Kazakhstan, Belarus, and Azerbaijan remained the top destinations for Russia's exports of sauces, mixed condiments, and seasonings in volume terms. Kazakhstan accounted for 31.1% of exports, Belarus for 16.4%, and Azerbaijan for 9.6%. Together, these three countries represented 57.0% of total export flows.

Russia's exports of sauces, mixed condiments, and seasonings in value terms have increased for the third consecutive year. In 2021, export value reached 188.2 million US dollars, up by 36.8% from the previous year. Over the 2018-2021 period, exports grew by 64.7%, with a compound annual growth rate of 18.1%.

From 2018 to 2021, Kazakhstan, Belarus, and Azerbaijan were the leading destinations for Russia's exports of sauces, mixed condiments, and seasonings in value terms. Kazakhstan held a 31.7% share, Belarus 17.5%, and Azerbaijan 7.8%. Combined, these three countries absorbed 56.9% of total export value.
