From 2018 to 2022, the market for salted, brined, dried or smoked pork in South Africa expanded consistently, with volume rising from 25 928 t to 35 292 t. Initial growth was supported by rising consumer incomes and shifting preferences toward premium meat products. Global factors, including African Swine Fever outbreaks in key exporting countries, kept pork prices firm and encouraged domestic production, contributing to further market growth in 2021.

The market volume declined to 33 475 t in 2023. This downturn coincided with a drop in real disposable incomes, which led households to seek more affordable protein alternatives. Simultaneously, outbreaks of African Swine Fever and Foot and Mouth Disease tightened formal supply chains, reducing both domestic output and imports.

SADC's production of salted, brined, dried, or smoked pork increased for the second year in a row. In 2020, the region produced 28 543 tons, marking a 6.8% rise from 2019. Over the period from 2017 to 2020, production grew by 12.6%, which translates to an average annual increase of 4.0%. The lowest production level was recorded in 2018 at 23 972 tons, with the largest decline that year of 5.4%. Conversely, the most significant increase occurred in 2019, with an 11.5% jump.

Market performance showed notable fluctuations during this period. Exports reached their highest point in 2018 at 308 tons and hit their lowest in 2020 at 61 tons, representing a fivefold difference. In 2020, SADC exported 61 tons of salted, brined, dried, or smoked pork, reflecting a sharp 31.5% drop from the previous year. The largest decline was recorded in 2019 at 70.9%, while the biggest increase occurred in 2018 with a 131.4% surge.

Vietnam accounted for 16.9% of exports, Hong Kong for 4.4%, and Saint Helena, Ascension and Tristan da Cunha for 1.1%. Together, these three markets represented 22.4% of total export flows.
