The market volume for salted, in brine, dried or smoked beef in Ukraine showed considerable fluctuation between 2018 and 2023. The Ministry of Health Order No. 45 of January 8, 2024, established updated requirements for food additives, flavorings, and enzymes used in meat processing. Simultaneously, the Ministry of Agrarian Policy introduced Order No. 431/2024, setting a new state registration procedure for production capacities and market operators, and Order No. 3498/2024, which defined hygienic standards for small-volume production and circulation of meat products.
