The Jordanian market for prepared or preserved poultry meat and offal opened the period at 2 596 t in 2018, supported by a stable domestic poultry sector with high self-sufficiency and available feed supplies. That year also saw the opening of imports for chilled veal from Egypt and fresh lamb and goat meat from Syria, broadening the overall meat supply and options for consumers.

Market volume contracted to 2 013 t in 2019 before recovering gradually to 2 470 t by 2022. During this recovery, quarterly statistical reports in 2021 noted seasonal production shifts in chicken meat linked to variable feed costs, contributing to year-to-year fluctuations in output and market size.

In 2023, the market declined to 2 142 t as high feed costs directly pressured poultry farms and slaughterhouse operations, reducing production. The Ministry of Agriculture attempted to counter high prices by injecting volumes to balance supply. By 2024, industry tensions over chicken availability and pricing emerged, with reports of supply shortages, debates over price ceilings, and some processors refusing sales to popular restaurants.

In 2019, Jordan's production of prepared or preserved poultry meat or offal reached its lowest point at 509.0 t, declining by 11.9% from the previous year. However, production rebounded in 2020 to 574.5 t, marking a 12.9% increase compared to 2019. Over the 2017-2020 period, production grew by 9.3%, with an average annual growth rate of 3.0%. The peak production was recorded in 2018 at 577.4 t.

From 2017 to 2020, Iraq, Qatar, and Kuwait were the key export partners for Jordan's prepared or preserved poultry meat or offal in volume terms. Iraq accounted for 49.6% of exports, Qatar for 15.3%, and Kuwait for 7.3%. Together, these three countries represented 72.2% of total export flows.

From 2017 to 2020, the United Arab Emirates, Palestine, and Saudi Arabia were the main suppliers of prepared or preserved poultry meat or offal to Jordan in volume terms. The UAE accounted for 36.0% of imports, Palestine for 24.7%, and Saudi Arabia for 17.2%. Together, these three countries made up 77.9% of total import volume.
