The African swine fever outbreak in China increased global demand for pork, stimulating Canadian production for export and affecting trade flows. In 2020, the COVID-19 pandemic shifted consumption patterns, with restaurant closures boosting retail sales for home consumption and a concurrent drop in exports, which made more product available domestically.

Market volume fluctuated between 2021 and 2023, stabilizing at 13 395 t in 2021, then falling to 9 399 t in 2022 before recovering to 10 405 t in 2023. The launch of over 800 new processed pork products, including the growing Spam brand, supported demand in 2021. Subsequently, strong export performance from Quebec, which accounts for about 5% of global pork trade, contributed to the 2022 decline. In 2023, despite sector challenges such as worker shortages and the closure of slaughter facilities, including Vallée-Jonction, a slight reduction in exports allowed the domestic market volume to increase.
