The market volume for prepared beef and offal in Armenia experienced notable fluctuations between 2018 and 2023. Starting at 1 236 tons in 2018, it dipped to 1 156 tons the following year before surging to a peak of 1 414 tons in 2020. A sharp contraction followed in 2021, bringing the market down to 1 046 tons, but it recovered to 1 197 tons in 2022 and stabilized near 1 181 tons in 2023.

The 22% market volume increase in 2020 coincided with the COVID-19 pandemic, which triggered global supply chain disruptions. This event likely contributed to a substantial rise in imports, which jumped to 335 tons that year, as consumers may have sought preserved meat products amid uncertainty, bolstering total market supply even as domestic production held steady.

Following the 2021 downturn, the market regained ground in 2022 and entered a phase of stabilization in 2023, with volume settling close to pre-pandemic levels, indicating a return to more typical demand patterns for prepared beef products in the country.

Armenia's production of prepared or preserved beef and offal increased for the second consecutive year. In 2020, the country produced 1 251 tonnes, remaining almost unchanged from the previous year. Looking at the period from 2017 to 2020, overall production decreased by 6.7%, which translates to an average annual decline of 2.3%. The lowest production level was recorded in 2018 at 1 245 tonnes. That same year saw the largest decline of 7.1%, while 2019 experienced the biggest increase of 0.3%.

After two years of decline, Armenia's production value of prepared or preserved beef and offal rebounded. In 2020, the output was valued at 6 943 thousand US dollars, marking a significant increase of 28.5% compared to 2019. Over the 2017-2020 period, however, production value decreased by 16.4%, with a compound annual growth rate of -5.8%. The lowest value was recorded in 2019 at 5 404 thousand US dollars. The largest decline occurred in 2018 with a drop of 29.2%.
