From 2018 to 2020, the poultry meat and offal market volume in South America increased from 38.9 million tonnes to 39.8 million tonnes. This growth was supported by improved access to export markets after Peru was declared free of high-pathogenic avian influenza, as well as the approval of a national export plan to Singapore. Domestic demand remained robust, evidenced by significant imports of frozen chicken to meet processing capacity needs.

In 2021, market volume dropped to 38.1 million tonnes, while demand for processed and frozen products for quick-service restaurants continued to grow. Over the next two years, the market recovered, reaching 39.2 million tonnes in 2023, despite Peru's loss of avian influenza-free status, which temporarily disrupted exports. A 415% surge in turkey meat exports in 2022 partially offset these disruptions, supporting overall production.
