The volume of the pig offal market in the Caribbean fluctuated significantly between 2018 and 2023. After a slight increase from 15 681 t in 2018 to 15 829 t in 2019, the market contracted sharply to 12 757 t in 2020. A recovery followed, bringing the market size to 14 983 t in 2022, before another substantial decline to 9 183 t in 2023.

This volatility was underpinned by a stark downturn in domestic production, which fell from 15 171 t in 2018 to just 7 360 t in 2023. Over the same period, imports grew consistently, rising from 515 t to 1 824 t, indicating a shifting supply structure toward foreign sources to meet local demand.

In 2024, imports surged to 3 031 t. This growth aligns with broader global industry trends, including rising consumer demand for sustainable, nutrient-dense proteins supporting nose-to-tail consumption, major investments by global producers in processing and cold chain infrastructure, and specific regulatory developments like updated labeling requirements for pork and offal products in markets such as the UK.

In 2019, Caribbean produced 15 258 tonnes of pig offal, marking the highest output during the period. However, production fell to 11 819 tonnes in 2020, representing a significant 22.5% decrease from the previous year. Over the entire 2017-2020 timeframe, production declined by 22.4%, with an average annual decrease of 8.1%. The largest year-on-year increase was a modest 0.6% in 2019.

The highest volume was recorded in 2018 at 4.3 tonnes, while the lowest was in 2019 at just 0.3 tonnes, creating a 15-fold difference between these two years. In 2020, exports recovered to 0.4 tonnes, marking a 58.3% improvement over 2019. The most dramatic decline occurred in 2019 with a 93.5% drop, while the largest increase was in 2018 with a remarkable 1 209.4% surge.

Between 2017 and 2020, the main destinations for Caribbean's pig offal exports were Bunkers, accounting for 18.8% of total volume, the United States with 13.9%, and Germany at 0.6%. Together, these three markets represented 33.3% of all export flows during this period.
