This expansion was supported by a shift in consumer preferences, particularly in Canada where interest in traditional and exotic offal dishes increased, and by government policies encouraging the use of animal byproducts to reduce greenhouse gas emissions.

After peaking in 2020, the market adjusted with volume declining to 897 thousand tonnes in 2022. During this period, JBS Food's acquisition of Biotech Foods in May 2022 emphasized the industry's focus on whole-animal utilization, while ongoing consumer awareness of food waste reduction and sustainability helped maintain demand.

In 2023, the market volume recovered to 917 thousand tonnes. This recovery was driven by the food industry's efforts to incorporate offal into processed products like sausages and pâtés, which improved accessibility and overcame preparation barriers, alongside growing consumer recognition of offal's nutritional benefits and affordability.
