The Canadian pig offal market volume expanded from 91.8 thousand tons in 2018 to a peak of 100.7 thousand tons in 2020, while in value terms it rose to $237.2 million in 2019 before moderating to $208.2 million the following year.

Market volume contracted to 87.8 thousand tons in 2021, as strong cross-border export activity to the United States from major producing provinces reduced domestic availability. A slight recovery to 89.9 thousand tons occurred in 2022, coinciding with a noted decline in pork exports to China which increased supply for the home market. By 2023, volume climbed to 96.7 thousand tons, supported by growing consumer interest in health and nutritional value, while widespread price inflation contributed to the market value rising to $233.7 million.

From 2017 to 2020, overall production rose by 8.1%, which translates to an average annual growth rate of 2.6%. The lowest production level was recorded in 2018 at 124.4 K t, with the largest decline occurring that same year at 0.2%.

Following two years of growth, pig offal production in Canada experienced a downturn. In 2020, the output was valued at 265.0 M $ US, reflecting a significant decline of 15.9% compared to 2019. Over the 2017-2020 period, production increased by 2.8%, with a compound annual growth rate of 0.9%. The peak value was reached in 2019 at 314.9 M $ US, which also saw the largest increase of 13.4%.

From 2017 to 2020, Mexico, the United States, and Hong Kong were the primary destinations for Canada's pig offal exports by volume. Mexico accounted for 45.3% of exports, the United States for 30.3%, and Hong Kong for 9.6%. Together, these three markets made up 85.3% of Canada's total pig offal exports in kind.

After two years of growth, pig offal exports from Canada declined. In 2020, export value totaled 90.1 M $ US, down by 19.3% from the previous year.
