The peak in 2018 was followed by a contraction, but demand rebounded in 2020 when the COVID-19 pandemic led consumers to seek more fresh ingredients for home cooking, pushing the market to 16 504 t.

Subsequent years saw renewed pressure: after a dip in 2021, the market partially recovered to 15 591 t in 2022 even as worldwide increases in fuel, electricity, and labor costs raised production expenses across the agricultural sector. By 2023, however, the overall volume had slipped again, closing the period lower than where it began.
