From 2018 to 2019, the pastry market in Moldova grew from 11 215 t to 12 622 t, fueled by producers' adaptation to higher quality and hygiene standards, a preferential 8% VAT rate for certain bakery products, and the strong market position of Franzeluța, which accounts for around 70% of domestic production. The following year, market volume edged down to 12 392 t as the sector implemented new EU-aligned quality rules, including mandatory iodized salt use.

A pronounced rebound occurred in 2021, with market volume jumping to 15 255 t, and growth continued through 2023, reaching 16 591 t. This upturn was propelled by shifting consumer tastes toward healthier and more diverse pastry options, which encouraged manufacturers to broaden their assortments. Concurrently, from 2022 onward, the National Food Safety Agency (ANSA) enforced limits on industrial trans fats in pastry items, enhancing product safety and consumer trust, a regulatory push that remained active through 2024.
