The Polish market for not defatted cocoa paste saw a notable expansion in 2020, with volume rising to 55 085 t, largely due to growing consumer interest in high-quality cocoa and the emergence of new segments such as keto protein bars, plant-based milk chocolates, and ceremonial cocoa paste. This shift followed the 2018 introduction of Mars' 'Cocoa for Generations' strategy, which emphasized sustainable sourcing and influenced market expectations toward responsible production.

After a contraction to 43 859 t in 2021, the market recovered to 50 854 t by 2023. This rebound occurred despite rising costs for key raw materials like cocoa, milk, and sugar, alongside logistical challenges and tightening EU environmental regulations. During this period, changing consumer preferences also supported demand, as seen in the growing sales of Fairtrade-certified cocoa products in Poland.

Entering 2024, market conditions were further shaped by preparations for the EU Deforestation Regulation (EUDR) set for late 2025, which requires proof of sustainable cocoa origins. Persistent global cocoa shortages and high prices above 10 000 USD per tonne continued to affect supply, while sustained demand for Fairtrade chocolate and strong Polish chocolate exports highlighted the market's adaptability.

Poland's production of not defatted cocoa paste grew for the second year in a row. In 2020, the country produced 12 136 tonnes, a 13.4% increase from the previous year. Over the 2017-2020 period, production rose by 21.7%, translating to an annualized growth rate of 6.8%. The lowest output was in 2018 at 7 924 tonnes, which also saw the largest decline of 20.5%. In contrast, 2019 recorded the highest growth with a 35.1% increase.

Poland's production value of not defatted cocoa paste continued to rise for the second consecutive year. In 2020, it reached 47 515 thousand US dollars, a strong 15.4% increase year-over-year. Between 2017 and 2020, the value grew by 14.5%, averaging 4.6% annually. The lowest value was in 2018 at 32 451 thousand US dollars, which experienced the largest drop of 21.8%. The biggest increase occurred in 2019, with a 26.9% rise.

Poland's exports of not defatted cocoa paste increased for the second year in a row. In 2020, shipments totaled 13 086 tonnes, up 23.4% from the previous year. From 2017 to 2020, exports grew by 12.9%, with a compound annual growth rate of 4.1%. The lowest export volume was in 2018 at 9 838 tonnes, which also saw the largest decline of 15.1%.

Between 2017 and 2020, France and Germany were the leading buyers of not defatted cocoa paste from Poland, together accounting for 80.7% of total exports in volume. Other destinations each held relatively small shares.

Poland's export value of not defatted cocoa paste rose for the second consecutive year. In 2020, it reached 51.2 million US dollars, a steep 25.6% increase compared to 2019. Over the 2017-2020 period, export value increased by 6.2%, averaging 2.0% annually. The lowest value was in 2018 at 40.3 million US dollars, which recorded the largest decline of 16.5%.
