Between 2018 and 2021, the market volume of not defatted cocoa paste in France fluctuated, starting at 172.8 thousand tons in 2018, dropping to 157.0 thousand tons in 2019, surging to 190.6 thousand tons in 2020, and then falling back to 156.8 thousand tons in 2021. In value terms, the market followed a similar pattern, peaking at $673.2 million in 2020.

From 2022, supply risks in West Africa initiated a cocoa price rally. This contributed to a slight volume increase to 162.2 thousand tons in 2022, while the market value rose to $606.4 million. In 2023, poor harvests in Côte d'Ivoire and Ghana caused by climate change and El Niño, along with Côte d'Ivoire's suspension of forward sales, led to a sharp volume contraction to 145.5 thousand tons. However, skyrocketing cocoa prices drove the market value up to $651.2 million.

In 2024, the cocoa price surge intensified due to continued supply shortages. Concurrently, the French market saw evolving consumer preferences toward premium products and ready-to-eat items, alongside an expansion of distribution channels.

France's production of not defatted cocoa paste grew for the third consecutive year. In 2020, the country produced 127.5 K t, marking a modest year-over-year increase of 2.0%. From 2017 to 2020, production rose by 12.7%, which translates to an annualized growth rate of 4.1%.

In 2020, France exported 47.3 K t of not defatted cocoa paste, a decrease of 3.7% from the previous year. From 2017 to 2020, exports increased by 10%, averaging an annual growth rate of 3.2%. The lowest export volume was recorded in 2018 at 36.8 K t, while the peak occurred in 2019 with 49.1 K t. Exports saw their sharpest decline in 2018, falling by 14.5%, and their largest increase in 2019, rising by 33.7%.

From 2017 to 2020, Germany, Belgium, and the Netherlands were the top destinations for France's not defatted cocoa paste exports by volume. France's not defatted cocoa paste exports by value grew for the second consecutive year. In 2020, exports reached 198.9 M $ US, up 10.5% year-over-year. Over the 2017-2020 period, export value increased by 20.7%, with a CAGR of 6.5%. The lowest value was recorded in 2018 at 132.8 M $ US, which also saw the largest decline of 19.4%. The most significant increase occurred in 2019, with a 35.5% rise.

Between 2017 and 2020, Germany, Belgium, and the Netherlands were the leading contributors to France's not defatted cocoa paste exports by value. Following a two-year decline, France's imports of not defatted cocoa paste by volume rebounded in 2020. The country imported 110.4 K t, showing a substantial increase of 36.1% compared to the previous year. From 2017 to 2020, imports grew by 25%, averaging an annual rate of 7.7%. The lowest import volume was in 2019 at 81.1 K t, which also experienced the largest decline of 5.4%.

From 2017 to 2020, Côte d'Ivoire, the Netherlands, and Ghana were the key sources for France's not defatted cocoa paste imports by volume. Côte d'Ivoire supplied 39.1% of imports, the Netherlands 21.9%, and Ghana 10.1%. Together, these three countries represented 71.1% of total import flows.

After a two-year decrease, France's imports of not defatted cocoa paste by value increased in 2020. Import value totaled 336.1 M $ US, rising by 22.8% compared to 2019. However, over the 2017-2020 period, imports decreased by 5.4%, with an annualized decline of 1.8%. The lowest value was recorded in 2019 at 273.7 M $ US, while the largest drop occurred in 2018, falling by 19.0%.
