A notable acceleration occurred in 2023, with market volume increasing by 14% to reach 17,129 tons. This surge was primarily driven by a sustained rise in per capita pork consumption in Peru, which grew from 3 kg to 10 kg over the preceding decade. The increase was underpinned by the modernization of the domestic production chain, which enabled the supply of leaner, higher-quality pork, and by targeted promotional campaigns such as the National Day of Peruvian Pork Chicharrón, which helped reposition pork within the national diet.

Domestic production rose consistently throughout the period, reaching 15,687 tons in 2023, contributing significantly to the overall market supply. These production gains were supported by genetic improvements in swine herds aimed at increasing lean meat yield and reducing backfat thickness, aligning with evolving consumer preferences for healthier, leaner cuts.

Between 2017 and 2020, imports decreased by 43.7%, equivalent to an annualized decline of 17.4%. The peak import volume occurred in 2018 at 943.0 tonnes, which also saw the largest annual increase of 39.4%. The most significant decline was recorded in 2019 with a 51.5% drop.
