However, in 2020, COVID-19 pandemic disruptions to transportation and distribution caused a contraction in market volume to 80 093 t.

A post-pandemic recovery in 2021 brought the market to 82 957 t, aided by a focus on product freshness and innovations aimed at attracting new consumers. Growth continued to 87 056 t in 2022, alongside updated regional regulations on marketable species. By 2023, despite product shortages from adverse weather and cultivation diseases, market volume stabilized at 88 209 t, driven by strong demand for fresh convenience products and the entry of new offerings such as organic shiitake mushrooms.
