The market volume for fresh mushrooms and truffles in Europe rose from 1.13 million tonnes in 2018 to 1.39 million tonnes in 2019. This growth was fueled by increasing consumer preference for fresh, regional mushrooms and the broader shift toward vegan and plant-based diets, which boosted demand for innovative products like mushroom burgers. The COVID-19 pandemic in 2020 further intensified focus on local and fresh produce, although harvest and delivery issues caused production bottlenecks, leading to a slight market contraction to 1.36 million tonnes.

Market volume recovered to 1.39 million tonnes in 2021, supported by steady mushroom production in Germany and imports of wild mushrooms from Eastern Europe. However, 2022 saw a sharp decline to 1.18 million tonnes. By 2023, volume stabilized at 1.17 million tonnes, as rising consumer awareness of quality and origin spurred demand for specialty items such as truffles, which gained popularity both fresh and in processed forms like oils and pastas.

Europe's production of mushrooms and truffles has grown for the second year in a row. In 2020, the continent produced 1 459 thousand tonnes, marking a 14.1% increase from 2019. Looking at the period from 2017 to 2020, production rose by 10.7%, which translates to an average annual growth rate of 3.4%. The lowest production volume was recorded in 2018 at 1 235 thousand tonnes, with the largest decline that year reaching 6.4%.

The value of mushroom and truffle production in Europe has also increased for two consecutive years. In 2020, output was valued at 98 099 million US dollars, showing a robust 16.4% gain compared to 2019. From 2017 to 2020, production value grew by 29%, with a compound annual growth rate of 8.8%. The minimum value occurred in 2018 at 73 167 million US dollars, when the largest decline of 3.8% was recorded.

Exports mushrooms and truffles from Europe

In 2020, Europe's export volume of mushrooms and truffles reached 418.7 thousand tonnes, representing a significant 34.9% increase from the previous year. Over the 2017-2020 period, exports grew by 19.3%, averaging an annualized rate of 6.1%. From 2017 to 2020, Norway and Switzerland were the leading buyers of mushrooms and truffles from Europe, together accounting for 2.5% of total exports in volume terms.

In 2020, the value of Europe's mushroom and truffle exports totaled 1 404 million US dollars, showing a modest 2.1% rise compared to 2019. Between 2017 and 2020, export value increased by 13.8%, with a compound annual growth rate of 4.4%. The largest decline was in 2019 at 0.9%, while the biggest increase occurred in 2018 with a 12.5% gain.

During 2017-2020, Switzerland (2.2% of export value), Norway (1.6%), and the United States (1.5%) remained the primary buyers of mushrooms and truffles from Europe, collectively representing 5.2% of total export value.
