The Australian market for fresh or chilled mushrooms and truffles showed moderate fluctuations from 2018 to 2020, with the market volume hovering around 52 600–54 700 t. Further contraction was recorded in 2023, with the market volume easing to 66 460 t. During this time, strategic investments were made in manufacturers of truffle-based products to bolster distribution capabilities, while consumer preferences increasingly favored health-promoting and exotic mushroom varieties.
