From 2018 to 2020, goat meat production in Turkey steadily increased from 82.8 thousand tons to 90.4 thousand tons. This growth was supported by the regulatory role of the state-owned Et ve Süt Kurumu (ESK), which set purchase prices to stabilize the market. Simultaneously, rising consumer demand for natural, additive-free, and halal meat products stimulated production, while large integrated facilities like Koçaşlar Entegre Et Tesisleri provided the necessary capacity.

The COVID-19 pandemic in 2020 initially caused supply chain disruptions, but the sector adapted quickly. Increased time spent at home boosted demand for healthy protein sources like goat meat, and government support ensured supply continuity. Growth continued in 2021–2022, with Turkey introducing duty-free import of goat meat from Bosnia and Herzegovina under a tariff quota of up to 2,000 tons in 2021, extended through 2022. This measure altered the competitive landscape but also contributed to market activity alongside persistent consumer preference for quality meat.

By 2023, production reached 129.0 thousand tons, maintaining the upward trend driven by sustained consumer demand for natural and halal products and effective state market regulation.

Turkey's goat meat production grew for the third year in a row. In 2020, the country produced 90 443 tonnes of goat meat, marking a 3.8% increase from the previous year. Between 2017 and 2020, production rose by 16.3%, which translates to an average annual growth rate of 5.2%.

From 2017 to 2020, the United Arab Emirates (44.7% of exports in kind), Panama (18.4% of exports in kind), and Belgium (13.1% of exports in kind) were the top destinations for Turkey's goat meat exports, together making up 76.3% of the total volume.
