Mauritania's goat meat production volume stood at 17 786 metric tons (t) in 2018, edging down slightly to 17 557 t by 2020. This period of stability occurred within a legal framework anchored by the Agricultural and Pastoral Orientation Law (LOAP), which provided a consistent regulatory base for the sector. The country's substantial livestock herd, exceeding 20 million head, structurally supported a surplus red meat supply estimated at around 40% of needs.

From 2021 onward, output entered a growth phase, reaching 18 627 t that year and climbing further to 18 855 t in 2023. The latter increase coincided with regulatory enhancements, including the establishment of the Mauritanian Food Safety Agency (AMSSA) in early 2023 to strengthen meat inspection and traceability, alongside a general livestock census aimed at improving herd management and sector planning.
