The Peruvian garlic market volume fell from 93.3 thousand tons in 2018 to 70.7 thousand tons in 2019, driven by unstable sown areas and production difficulties that reduced the harvest. Although exports increased slightly, the drop in domestic output sharply curtailed supply for the local market.
Market volume recovered to 78.8 thousand tons in 2020 and jumped to 97.0 thousand tons in 2021. This rebound was propelled by advances in cultivation techniques and China's logistical challenges, which opened international opportunities and spurred higher production. In 2022, the market stabilized at 97.4 thousand tons as a rise in output was offset by a significant increase in exports, particularly to the United States, amid a 15% drop in international prices.
In 2023, market volume dropped to 79.4 thousand tons as exports surged by 27% through August, drawing supply away from domestic consumption. During this period, the sector also began diversifying into value-added products such as black garlic, extracts, and peeled garlic for industrial and retail segments.

In 2020, Peru produced 90.7 thousand tons of garlic, representing a moderate increase of 9.3% compared to the previous year. Over the period from 2017 to 2020, production declined by 4.4%, which translates to an annualized decrease of 1.5%. The lowest production level was recorded in 2019 at 83.0 thousand tons, while the highest was in 2018 at 104.7 thousand tons.
