Market volume experienced significant fluctuations, rising sharply to 15.6 thousand tons in 2019 before declining over the subsequent years to a low of 12.4 thousand tons in 2022. The market then rebounded strongly in 2023, reaching 15.7 thousand tons.

This recovery in 2023 coincided with policy discussions on new genomic techniques for plants, which could impact future agricultural yields, and a noted evolution in Italian consumer preferences across different age groups and regions, which began reshaping established supply models.

The strongest growth was in 2019, with a 29.1% rise.
