The market for dried eggs in Lebanon expanded from 183.7 tonnes in 2018 to 342.1 tonnes in 2023. This growth was driven by smuggling of eggs from Syria, which suppressed domestic production, and the severe economic and political crisis that began in 2020, causing shortages and record price hikes that spurred a surge in imports. By 2021, the loss of traditional export markets to smuggled Ukrainian eggs further impacted local producers, while high prices continued to attract imported supply.

Government interventions in 2023, including the launch of mobile sales outlets for discounted eggs and antitrust prosecution of major producers for illegal price-fixing, helped stabilize the market and support a recovery in domestic output. This contributed to the market's rebound to 342.1 tonnes after a contraction to 266.0 tonnes in 2022.

In 2024, the war in Lebanon disrupted agricultural production, while factors such as growing industrial demand for dried eggs in food processing and continued competitive pressure from smuggled eggs indicated ongoing shifts in the market structure.

After a two-year decline, dried egg production in Lebanon increased in 2020. That year, Lebanon produced 111.0 tonnes of dried eggs, representing a 6.3% increase from 2019. Over the period from 2017 to 2020, production decreased by 4.5%, which equates to an annualized decline of 1.5%. The lowest production level was recorded in 2019 at 104.4 tonnes, with the largest year-on-year decline of 6.4% also occurring that year.

From 2017 to 2020, Denmark (41.2% of imports in kind), France (32.2%), and Ukraine (13.0%) were the largest contributors to Lebanon's dried egg imports in kind. Together, these three countries accounted for 86.3% of total flows.
