Between 2018 and 2020, the U.S. coffee market volume first declined to 2 240 thousand tons in 2019 before rebounding sharply to 2 729 thousand tons in 2020. The 2020 surge was primarily driven by the COVID-19 pandemic, which triggered a widespread shift toward at-home consumption and significantly boosted sales of coffee pods and ground coffee. This period was also characterized by underlying growth in consumer preference for specialty coffee and the expansion of single-serve formats, which shaped market dynamics.

The market volume contracted to 1 898 thousand tons in 2021, largely due to severe supply-chain disruptions that increased import costs and retail prices, limiting available supply. A strong recovery followed, with volume reaching 2 751 thousand tons in 2022 and 2 841 thousand tons in 2023, supported by a post-pandemic rebound in demand and a continued consumer shift toward convenient single-serve pods. During these years, regulatory developments such as the California Transparency in Supply Chains Act and Hawaii's Act 222 introduced new coffee labeling and transparency requirements, while stricter EU limits on ochratoxin A influenced export practices.

Heading into 2024, sustained consumer demand was evident, with surveys showing a 14% rise in daily coffee consumption since 2021, leading major chains to expand plant-based and low-sugar options. Supply-chain constraints from previous years persisted, keeping import costs elevated. Concurrently, the U.S. Food and Drug Administration issued draft guidance on labeling for coffee-derived ingredients like coffee-husk flour, requiring clearer caffeine content and allergen declarations.
