From 2018 to 2021, the Honduran chicken meat and offal market showed significant fluctuations. After stable volumes near 221-222 thousand tonnes in 2018-2019, the market contracted to 202.8 thousand tonnes in 2020. A strong recovery followed in 2021, with consumption jumping to 236.4 thousand tonnes.

In 2022, regulatory changes shaped the market. Frozen chicken was added to the sales tax exemption to improve food safety and affordability for consumers. New rules also limited moisture content in frozen chicken to prevent adulteration, while the National Poultry Program introduced stricter biosecurity and registration requirements for farms and processors. These measures supported domestic production, which rose to 227.2 thousand tonnes, even as the total market volume eased slightly to 234.7 thousand tonnes amid falling imports.

The market expanded again in 2023, reaching 236.5 thousand tonnes. Production also increased to 229 thousand tonnes, continuing the growth trend under the strengthened regulatory framework.

Honduras experienced a decline in chicken meat and offal production after two years of growth. In 2019, production reached its peak at 206.7 thousand tonnes, but by 2020 it had fallen to 187.0 thousand tonnes, marking a 9.5% decrease from the previous year. Over the 2017-2020 period, overall production dropped by 2.9%, with an average annual growth rate of 1.0%. The most significant increase occurred in 2018, when production rose by 6.7%.

Honduras saw its third consecutive year of growth in the value of chicken meat and offal production. In 2020, output was valued at 289.2 million US dollars, showing a modest increase of 1.6% compared to 2019. From 2017 to 2020, the total value of production grew by 21.8%, with an average annual growth rate of 6.8%.

In 2020, Honduras exported 1 045 tonnes of chicken meat and offal, representing a 21.3% decrease from 2019. The lowest export volume was recorded in 2018 at 855 tonnes, which saw a sharp decline of 40.2% from the previous year. However, exports rebounded in 2019 with a significant increase of 55.2%. Overall, between 2017 and 2020, exports fell by 26.9%, equivalent to an average annual decrease of 9.9%.

From 2017 to 2020, El Salvador and Guatemala were the primary destinations for Honduras's chicken meat and offal exports in volume terms, together accounting for 80.7% of total exports. The remaining share was distributed among other partner countries.

In 2018, export value hit its lowest point at 1 066 thousand US dollars, declining by 39.5% from the previous year. This was followed by a strong recovery in 2019, with exports reaching 1 829 thousand US dollars, a 71.6% increase. By 2020, exports had decreased to 1 617 thousand US dollars, down 11.6% from 2019. Overall, there was a 1.7-fold difference between the peak in 2019 and the trough in 2018.
