From 2018 to 2021, the Honduran chicken meat and offal market showed significant fluctuations. After stable volumes near 221-222 thousand tonnes in 2018-2019, the market contracted to 202.8 thousand tonnes in 2020. A strong recovery followed in 2021, with consumption jumping to 236.4 thousand tonnes.

In 2022, regulatory changes shaped the market. Frozen chicken was added to the sales tax exemption to improve food safety and affordability for consumers. New rules also limited moisture content in frozen chicken to prevent adulteration, while the National Poultry Program introduced stricter biosecurity and registration requirements for farms and processors. These measures supported domestic production, which rose to 227.2 thousand tonnes, even as the total market volume eased slightly to 234.7 thousand tonnes amid falling imports.

The market expanded again in 2023, reaching 236.5 thousand tonnes. Production also increased to 229 thousand tonnes, continuing the growth trend under the strengthened regulatory framework.
