The cassava starch market volume reached 117.1 thousand tons in 2018, supported by a shift in consumer habits from traditional flour to starch and a reported 27% increase in production. However, the market contracted over the next two years, falling to 95.6 thousand tons in 2019 and 93.5 thousand tons in 2020.

From 2021, strengthened external demand led to record export volumes and prices, which stimulated domestic production and contributed to market growth. The market volume rose to 99.5 thousand tons in 2021 and 108.8 thousand tons in 2022, aided by strong demand from China and the potential boost from the Mercosur-European Union trade agreement.

The market expanded sharply to 175.8 thousand tons in 2023, driven by product diversification as nearly 38% of starch mills began producing derivatives like modified starches and cheese bread mixes. In 2024, new legislation in Mato Grosso do Sul authorized the use of cassava starch in school meals, while drought conditions and rising raw material prices impacted production costs.

In 2020, the Americas produced 98 091 tonnes of cassava starch, representing a 3.5% increase compared to the previous year. Looking at the period from 2017 to 2020, production grew by 10.1%, which translates to an average annual growth rate of 3.3%. The most significant decline occurred in 2019, with a drop of 1.2%, while the largest increase was recorded in 2018 at 7.7%.

Following two years of growth, cassava starch production in the Americas experienced a decline. In 2020, the output was valued at 77 441 thousand US dollars, marking a 12.4% decrease from 2019. Exports of cassava starch from the Americas grew for the second consecutive year. In 2020, the region exported 35 354 tonnes, a 35.5% increase from the previous year. Between 2017 and 2020, exports rose by 25.9%, equating to an annualized growth rate of 8.0%. The lowest volume was recorded in 2018 at 23 302 tonnes, which also saw the largest decline of 17.0%.

From 2017 to 2020, cassava starch exports from the Americas were distributed across a wide range of markets. Spain accounted for 1.4% of exports in kind, Portugal for 1.3%, and Italy for 0.8%, with these three countries together representing just 3.5% of total export flows.

Cassava starch exports from the Americas increased for the third year in a row. In 2020, exports reached 27 912 thousand US dollars, showing a strong year-over-year uptick of 14.8%. Over the 2017-2020 period, exports grew by 36.6%, with an annualized rate of 11.0%.

After two years of decline, cassava starch imports into the Americas rebounded. In 2020, import volume reached 30 726 tonnes, a 14.2% increase from the previous year. Over the 2017-2020 period, imports decreased by 47.8%, with a compound annual growth rate of -19.5%. The lowest volume was recorded in 2019 at 26 912 tonnes, which also experienced the largest decline of 39.5%.

From 2017 to 2020, Thailand and Vietnam were the primary suppliers of cassava starch to the Americas, together accounting for 40.8% of total imports in kind.
