From 2018 to 2019, the cassava market volume in Latin America and the Caribbean remained stable at around 26.5 million tons. This stability was underpinned by the expansion of cassava production in the region, particularly in Brazil and Colombia, for both human consumption and animal feed. Reduced subsidies for competing products improved cassava's competitiveness, while the cassava starch industry grew with a shift toward higher-value modified and hydrolyzed starches.
Market volume increased to 26.8 million tons by 2021, driven by continued expansion of cassava use for feed in Paraguay, Colombia, and Brazil, along with the development of drying and processing technologies for dried cassava chunks. Producer investments in high-yield varieties and the expansion of processing facilities enhanced market access. Simultaneously, the frozen cassava products segment grew in line with urbanization trends and consumer preference for convenient, ready-to-cook items.
After a decline to 25.5 million tons in 2022, the market recovered to 26.5 million tons in 2023. That year, cassava processing in Brazil reached record levels, fueled by strong demand for starch and flour, though dry and warm weather affected output. By 2024, production in Brazil and Argentina showed signs of increase, and global demand for gluten-free ingredients continued to support cassava processing in the region.
