The presence of established manufacturers like Günseven Şalgam, which operates a large-scale facility with an annual capacity of 120 million litres, provided a stable production base. Growing consumer preference for organic and natural products, particularly for black carrots used in şalgam suyu, supported market growth during this period.

A significant production increase in 2022, reaching 791.0 thousand tonnes, lifted the market volume to 680.4 thousand tonnes. This surge was facilitated by enhanced hygiene and quality standards in processing plants, along with the rising popularity of homemade and organic şalgam suyu. Large producers adopted farm-to-table control systems, while regulatory emphasis on additive-free ingredients reinforced product quality and consumer trust.

Throughout the period, improvements in cold storage technology allowed carrots to maintain freshness for up to four to six weeks, reducing waste and supporting market supply. The sustained demand for health-beneficial products, coupled with ongoing export activity for black carrots, kept the market dynamic, culminating in a stable volume of 694.5 thousand tonnes in 2023.
