The cabbage market in Czechia showed significant volatility from 2018 to 2023. After an initial market volume of 85 077 t in 2018, the market contracted by 6% in 2019 to 79 910 t, coinciding with an ongoing decline in the sauerkraut segment as consumers increasingly shifted to home production. The COVID-19 pandemic in 2020, however, spurred demand for health-boosting foods like sauerkraut, leading to a 12% market volume increase to 89 292 t and an 18% rise in production to 48 710 t.

In the following years, the market stabilized: in 2021, volume remained nearly flat at 89 723 t, supported by steady interest in fermented products. Yet in 2022, market volume fell by 12% to 79 130 t, reflecting structural challenges in sauerkraut production despite industry efforts to promote quality through competitions. By 2023, the market recovered slightly to 80 422 t, with production growing 5% to 47 720 t.

Cabbage production in Czechia has increased for the third consecutive year. In 2021, the country produced 49 050 tonnes of cabbages, marking a 0.7% rise compared to 2020. Between 2018 and 2021, production grew by 29.6%, which translates to an annualized growth rate of 9.0%.

In 2021, Czechia exported 6 856 tonnes of cabbages, showing a slight increase of 1.3% compared to 2020. Over the period from 2018 to 2021, exports rose by 21.6%, with a compound annual growth rate (CAGR) of 6.7%. The largest decline occurred in 2020, at 10.8%, while the largest increase was recorded in 2019, at 34.6%. The peak export volume was in 2019, reaching 7 590 tonnes.

From 2018 to 2021, Slovakia clearly dominated Czechia's cabbage exports in volume, accounting for 83.1% of total flows. Other countries each held significantly smaller shares.

In 2021, Czechia exported cabbages worth 6 055 thousand US dollars, representing a substantial increase of 49.3% from the previous year. Between 2018 and 2021, export value grew by 59.9%, equating to an annualized rate of 16.9%. The largest decline was in 2020, at 25.2%.

Over the 2018–2021 period, Slovakia remained the leading buyer of Czech cabbages in value terms, with 85.2% of total exports. The remainder was distributed across many other countries.

Foreign cabbage supplies to Czechia have increased for the second consecutive year. In 2021, imports amounted to 47 529 tonnes, remaining relatively stable compared to 2020. Between 2018 and 2021, imports decreased by 10.1%, which corresponds to an annualized decline of 3.5%. The lowest import volume was in 2019, at 46 170 tonnes, with the largest decline that year at 12.7%. The largest increase occurred in 2020, at 2.6%.
