Between 2018 and 2020, the whey market in Spain remained relatively stable in volume, hovering around 155-165 thousand tons. A significant shift occurred in 2021 when the market volume surged to 247.1 thousand tons, an increase of over 90 thousand tons from the previous year. This growth was accompanied by a rise in the market's value to 100.3 million USD.

Following 2021, the market volume continued its upward trajectory in physical terms, reaching 291.1 thousand tons by 2024. In contrast, the market value peaked in 2021 and subsequently declined to 65.5 million USD in 2024, indicating a divergence between volume and value trends over the latter part of the period.

Domestic production showed strong growth from 2021 onward, exceeding 300 thousand tons in 2023 and 2024, which supported the expanding market volume. Over the same period, import volumes gradually decreased while exports increased, particularly in 2023.

Whey production in Spain increased for the second consecutive year. In 2020, output was valued at 94 988 K $ US, showing a robust gain of 23.4% compared to the previous year.
