From 2018 to 2020, Zambia's wheat starch production and market volume expanded significantly, reaching a high of 11 560 t and 11 595 t respectively in 2020. This growth was followed by a sharp contraction in 2021, when output fell to 4 074 t.

Production began to recover in 2022, rising to 4 201 t, coinciding with the Zambian Ministry of Agriculture launching a tender to build collection centers in several districts—an infrastructure move that could enhance logistics and distribution for agricultural products including wheat starch. The upward trend continued into 2023, with production reaching 4 710 t and market volume 4 715 t.

Following a two-year decline, Zambia's wheat starch production rebounded in 2020. That year, the country produced 11 560 tons of wheat starch, marking a sharp increase of 41.4% compared to the previous year. Over the broader period from 2017 to 2020, production fell by 10.5%, which translates to an average annual decrease of 3.6%. The lowest production level was recorded in 2019 at 8 176 tons, while the most significant drop occurred in 2018 with a 33.2% decline.
