This stability ended in 2020 when the COVID-19 pandemic disrupted logistics and demand, causing the market volume to contract sharply to 40 110 тыс. л.

A robust recovery followed in 2021, with the market expanding by 44% to 57 948 тыс. л. This surge was propelled by a 15.3% increase in vinegar production and a strengthening of domestic manufacturers' positions. Growth continued through 2022 and 2023, reaching 69 775 тыс. л, fueled by rising consumer interest in functional varieties like probiotic apple cider vinegar and an expanding product range from new and existing producers.

The upward trajectory peaked in 2024, with market volume climbing a further 20% to 83 849 тыс. л, marking a period of sustained post-pandemic expansion.

Russia's vinegar production rebounded after two years of decline. In 2021, production reached 52 353 thousand liters, marking a significant 41.5% increase compared to 2020. The lowest production level was recorded in 2020 at 37 001 thousand liters, which also saw the largest decline of 15.4%.

Russia's vinegar exports continued to grow for the second consecutive year. In 2021, exports amounted to 2 871 thousand liters, showing a substantial increase of 21.6% compared to the previous year. From 2018 to 2021, exports rose by 42.4%, equivalent to an average annual growth rate of 12.5%. The lowest export volume was recorded in 2019 at 1 560 thousand liters, which also experienced the largest decline of 22.6%. The most significant increase occurred in 2020, with a jump of 51.3%.

Between 2018 and 2021, the main destinations for Russia's vinegar exports in volume terms were Kazakhstan, accounting for 37.2% of exports, Ukraine with 20.8%, and Belarus at 15.3%. Together, these three countries represented 73.4% of Russia's total vinegar export flows during this period.

After two years of growth, Russia's vinegar exports in value terms declined. In 2021, exports totaled 1 760 thousand US dollars, down by 5.4% from 2020. However, over the broader period from 2018 to 2021, exports increased by 46.3%, averaging an annual growth rate of 13.5%. The peak value was recorded in 2020 at 1 860 thousand US dollars, while the largest increase occurred in 2019 with a rise of 32.7%.

In 2021, imports surged to 11 075 thousand liters, representing a dramatic increase of 101.5% compared to the previous year. Over the period, imports peaked in 2021, with the amplitude between the peak and trough reaching a two-fold difference.
