The Swiss market for vegetables, pulses and potatoes preserved in vinegar declined from 20 669 metric tons in 2018 to 17 445 metric tons in 2021, with a modest recovery to 18 833 metric tons in 2022 before contracting again to 17 184 metric tons in 2023.

A key regulatory shift occurred in September 2023 when buffered vinegar was authorized as a food additive (E 267) under EU regulation, permitting its use as a preservative or acidity regulator in canned vegetables. Swiss and European consumers also show increasing interest in naturally fermented and preserved foods, emphasizing quality and natural ingredients.

Swiss production of vegetables, pulses, and potatoes in vinegar increased in 2020 after two consecutive years of decline. The output reached 4 461 tonnes, marking a modest 0.7% rise compared to the previous year. However, looking at the broader period from 2017 to 2020, production actually fell by 11.4%, with an average annual decline of 3.9%. The lowest production level was recorded in 2019 at 4 431 tonnes, which also saw the steepest drop of 9.3% that year.

The peak export volume occurred in 2019 at 75 tonnes, which also experienced the largest increase of 21.3% that year.

From 2017 to 2020, Germany, France, and Austria were the top destinations for Switzerland's exports of vegetables, pulses, and potatoes in vinegar by volume. Germany accounted for 22.8% of exports, France for 22.1%, and Austria for 16.7%. Together, these three countries made up 61.5% of Switzerland's total export flows in this category.
