Between 2018 and 2019, India's vegetable puree market grew, supported by state and private investments in cold chain infrastructure and processing plants aimed at boosting exports. The implementation of a 5% GST rate for processed fruits and vegetables in 2019 reduced the tax burden, encouraging sector formalization and expanding production capacity.

The COVID-19 pandemic in 2020 caused supply chain disruptions, leading to a temporary market contraction. However, increased consumer demand for frozen and preserved vegetables with longer shelf life, alongside government support for processing infrastructure, facilitated recovery. In 2021, the entry of new players adopting farm-to-freezer models enhanced supply efficiency, driving market volume sharply higher to over 12.4 thousand t.

Global commodity price fluctuations and supply chain challenges in 2022 contributed to a market decline, despite ongoing investments in new processing facilities. By 2023, the market rebounded to 13.2 thousand t, reflecting sustained consumer preference for convenient, healthy vegetable puree products.

Vegetable puree production in India declined after two years of growth. In 2020, production reached 10 102 tonnes, marking a moderate year-over-year decrease of 4.3%. Over the entire 2017–2020 period, production increased by 8.6%, which translates to an annualized growth rate of 2.8%. The highest production level was recorded in 2019 at 10 559 tonnes, while the largest annual increase occurred in 2018 at 10.5%.

Export volumes showed significant volatility during this period. The peak was in 2017, followed by a trough in 2018, with a 13.9-fold difference between these years. In 2020, India exported 49.6 tonnes of vegetable puree, representing a slight decrease of 1.4% compared to 2019. The lowest export volume was recorded in 2018 at 25.1 tonnes, which also saw the largest decline of 92.8%. Conversely, the largest increase occurred in 2019, with exports rising by 100.5%.

From 2017 to 2020, the United Kingdom, Kuwait, and the United States remained the primary buyers of Indian vegetable puree in volume terms. The United Kingdom accounted for 29.2% of exports, Kuwait for 18.0%, and the United States for 15.9%. Together, these three markets represented 63.1% of India's total vegetable puree exports by volume.

Export values displayed an unstable trend throughout the timeframe. They reached their maximum in 2017 and fell to a minimum in 2018, with a 15-fold difference between these years. In 2020, India's cross-border shipments of vegetable puree amounted to 169.3 thousand US dollars, reflecting a significant gain of 52.8% compared to the previous year. The lowest value was recorded in 2018 at 60.7 thousand US dollars, which also experienced the largest decline of 93.4%. The largest increase occurred in 2019, with values rising by 82.4%.

Throughout 2017–2020, the United Kingdom, Saudi Arabia, and the United States continued to be the main markets for Indian vegetable puree exports in value terms. The United Kingdom accounted for 23.2% of export value, Saudi Arabia for 21.3%, and the United States for 17.7%. Collectively, these three countries represented 62.2% of total export flows by value.

Import volumes experienced noticeable fluctuations during the period. The peak occurred in 2019, while the trough was in 2017, with a 31-fold gap between these years. In 2020, India imported 1.6 tonnes of vegetable puree, indicating a steep reduction of 76.0% compared to 2019. The maximum import volume was recorded in 2019 at 6.8 tonnes, and the largest increase took place in 2018, with imports surging by 1,067.4%.

From 2017 to 2020, two leading markets—the United States and Japan—dominated India's vegetable puree imports by volume, together accounting for 90.4% of total imports. The remaining volume was distributed among a wide range of other countries.

Import values were characterized by volatility during these years. They varied 33-fold from the high in 2019 to the low in 2017. In 2020, India's imports of vegetable puree were recorded at 6.8 thousand US dollars, which is 34.6% lower than the previous year. The maximum value was in 2019 at 10.4 thousand US dollars, and the largest increase occurred in 2018, with values jumping by 1,496.0%.
