The turkey meat market in Mexico has long been characterized by limited domestic production and high reliance on imports, primarily from the United States. In 2019, national production increased by 10%, yet remained insufficient to meet demand, keeping import volumes steady. Market size grew gradually until 2021, when it surged to 172.9 thousand tonnes. This jump was driven by the COVID-19 pandemic and labor shortages, which constrained local output and forced a sharp rise in imports to cover holiday season demand, with imports accounting for about 73% of consumption that year.

In 2022, outbreaks of avian influenza in the United States severely restricted turkey availability for Mexico, causing a 32% drop in imports and reducing market size to 120.8 thousand tonnes. Domestic production also hit very low levels. By 2023, the market showed signs of recovery, with imports growing 19.1% year-on-year, although avian flu continued to disrupt supply chains and push up import prices. Production began a modest rebound but still failed to match domestic needs.

Through 2024, the market remains heavily import-dependent, with imports covering approximately 89.2% of consumption. New labeling regulations for prepackaged foods, phased in from late 2022, began applying to meat products, including turkey. Per capita consumption stays low at around 1.31 kg annually, concentrated in the year-end festive period. Ongoing avian flu outbreaks in the U.S. keep supply conditions volatile for the Mexican market.
