Mexico's pork market volume began the period at 1 864 thousand tonnes in 2018. The industry operated with a domestic self-sufficiency rate around 58%, constrained by infrastructural deficits and sanitary challenges, which sustained reliance on imported grains and pork. Market volume grew to 1 952 thousand tonnes in 2019 before declining to 1 850 thousand tonnes in 2020.
A pronounced expansion started in 2021, with market volume surging 28.6% to 2 379 thousand tonnes, driven by a sharp rise in imports to 917 thousand tonnes. This import-led growth was reinforced in 2022 by the existing tariff-rate quota system for fresh, chilled, and frozen pork, which facilitated inflows from the United States—the source of 89.2% of imports. Imports climbed to 1 197 thousand tonnes, helping lift total market volume to 2 733 thousand tonnes. Underpinning this growth was a strong consumer preference for fresh or chilled meat. The market continued to grow, reaching 2 833 thousand tonnes in 2023.
While domestic production increased steadily from 1 503 to 1 769 thousand tonnes between 2018 and 2023, export flows fluctuated. Shipments peaked at 321 thousand tonnes in 2020, supported by strong demand from Japan, but later moderated as China emerged as a key destination for frozen cuts like legs and shoulders.
