From 2018 to 2020, European production of sunflower, safflower or cottonseed oil increased from 14.0 million tonnes to 16.2 million tonnes, while market volume grew from 6.3 million tonnes to 7.0 million tonnes. The growth in 2020 was partly driven by the COVID-19 pandemic, which caused supply chain disruptions but also boosted consumer demand for healthier foods, including seed oils.

In 2021, production temporarily dropped to 14.1 million tonnes, yet market volume rose to 8.2 million tonnes, supported by innovations in seed processing and rising health awareness among consumers. The following year, the war in Ukraine significantly impacted the market, as Ukraine accounts for nearly half of global exports. A shift from maritime to land transport for Ukrainian products improved availability in Europe, contributing to a sharp increase in market volume to 11.5 million tonnes in 2022.

By 2023, production recovered to 17.7 million tonnes, but market volume declined to 9.1 million tonnes after the previous year's peak. French authorities allowed temporary recipe modifications without label changes, facilitating substitution of sunflower oil with other oils in food and cosmetics to address shortages. Additionally, new industrial facilities were launched, such as a crushing line for rapeseed and sunflower by the Avril group and Terrena cooperative, enhancing domestic processing capacity. By 2024, the market stabilized after the crisis, with development of new products like organic and vitamin-enriched oils.
