From 2018 to 2020, the French starch market volume showed notable shifts. It started at 1 762 thousand tons in 2018, then declined to 1 688 thousand tons in 2019. The following year, the market rebounded to 1 725 thousand tons, driven by a 6% rise in industrial starch consumption for corrugated cardboard production linked to the e-commerce surge during the COVID-19 pandemic.

After the 2020 peak, the market contracted to 1 612 thousand tons in 2021. It remained stable at that level in 2022, partly due to the global economic slowdown felt late in the year. A modest recovery to 1 640 thousand tons occurred in 2023, supported by growing food applications, especially in the confectionery-chocolate sector, which regained its position as the leading buyer after the COVID-19 crisis.

In 2020, France produced 1 583 K t of starches, showing little change from the previous year. Production reached its lowest point in 2019 at 1 574 K t, while it peaked in 2018 at 1 641 K t. The most significant decrease occurred in 2019, with a 4.0% drop, whereas the largest increase was recorded in 2018, at 1.5%.
