The Armenian starch market expanded from 3,210 tons in 2018 to 3,618 tons in 2020. This growth was initially supported by a 12.54% increase in flour production in early 2018, signaling broader development in the food processing sector that uses starch. Industrial output rose by 9% in 2019, further boosting demand. The COVID-19 pandemic in 2020 altered consumption patterns, leading to increased demand for food products and driving market volume to a peak.

After the 2020 peak, the market corrected to 3,149 tons in 2021. However, in 2022, Armenia's economy grew by 12.6%, largely due to an influx of Russian migrants and businesses relocating to the country. This surge in population and economic activity sharply raised domestic demand for food, pushing the starch market to a new high of 3,625 tons. By 2023, the market eased slightly to 3,492 tons, stabilizing despite continued overall economic growth and strong performance in other industries like ICT and automotive imports.

Armenia's starch imports in kind increased for the second consecutive year. In 2020, imports reached approximately 1 833 tonnes, representing a significant 17.1% rise compared to the previous year. Over the 2017–2020 period, imports grew by 24.2%, equating to an annualized growth rate of 7.5%. The lowest import volume was recorded in 2018 at 1 446 tonnes, which also saw the largest decline of 2.0% during that year.

From 2017 to 2020, Russia, Poland, and Germany were the main sources for Armenia's starch imports in kind. Russia accounted for 59.3% of imports, Poland for 18.3%, and Germany for 7.8%, with these three countries together making up 85.4% of total import flows.

Armenia's starch imports in value terms increased for the second year in a row. In 2020, imports were recorded at 935.8 thousand US dollars, a 9.1% increase from the previous year. Over the 2017–2020 period, imports rose by 13.9%, with a compound annual growth rate of 4.4%. The lowest import value was in 2018 at 780.1 thousand US dollars, which also experienced the largest decline of 5.0%. The most significant increase occurred in 2019, with a growth of 9.9%.

Between 2017 and 2020, Russia, Poland, and Germany led as the top suppliers of starches to Armenia in value terms. Russia held a 41.5% share, Poland 26.6%, and Germany 13.5%, with their combined share reaching 81.7% of total import value.
